Roasted Feisty Italian Fingerling Potatoes
1 2 lb. bag of fingerling potatoes
1 green bell pepper, sliced or sectioned finely
1 red bell pepper, sliced or sectioned finely
1 large yellow cooking onion, sliced or sectioned finely
4 tbls. olive oil
2 tbls. MME Herb Blend of choice (or to taste)
Preheat oven to 350 degrees Farenheit. Spread fingerling potatoes, red and green bell pepper slices, and onion slices on baking sheet. Drizzle with olive oil. Mix to coat well. Sprinkle over all with MME Herb Blend (I use Feisty Italian). Roast in oven for about twenty to thirty minutes until potatoes are fork tender. Mix vegetables every ten minutes to prevent over burning in spots. Vegetables will have some black "burn" spots that occur as part of the roasting technique. Delicious!
